As well as just change your style sheet and the normal options for osCommerce, there are also several template systems out there. The most common are the Simple Template System (STS) and the Basic Template System (BTS). There are many preconfigured templates available out there, many of them free.
Personally, I think osCommerce has already been wrapped in too many tables already so I never use these. I perfer CSS layout with DIV tags rather than table based layouts. I'm in the process of stripping out all the table filled code in osCommerce and making the whole site XHTML compliant. One of these days the package will be ready to go.
